Frozen Dumplings
Instructions
Fill a large pot with water, leaving enough room to add more water, and bring to a boil. Use a pot big enough for the dumplings to move freely and stay fully submerged.
Add the dumplings to the boiling water and stir gently so they don’t stick. Once the water returns to a boil, add ½ cup of water to lower the temperature. Let it return to a boil again. Repeat this process two times total.
While the dumplings are cooking, combine the sauce, Zha Cai, dried shrimp, chili oil, and sesame seeds in a large bowl.
When the dumplings are cooked, add 1½ cups of the boiling dumpling water to the sauce. The dumplings are done when they float. You will see the edges of the pinched dough become translucent, and the wrapper feels like an earlobe when you flick it.
Add the dumplings to the bowl of broth and toss to coat. Garnish with cilantro, green onion, or anything you like. The world is yours.
